There are some truly amazing dishes that you can’t wait to share the recipe of with the people you love (you all my readers). Aamras (blended mango pulp/purée) is one such dish! Until a few years back, I wasn’t even aware that such a dish exists, all mango preparations (sweet ones) I knew were mango milk shake, mango ice cream or mango jam. I got introduced to Aamras only when I got the opportunity of staying in Mumbai (India) for a couple of years. So, Aamras is primarily a dish which is very popular in Western Indian states of Maharashtra and Gujarat. Aamras-Poori (deep-fried and puffed wheat bread) is a delicacy in that region.
This week, the better half got some really sweet and juicy mangoes (just what is required to make aamras) and we planned to make Aamras-Poori. I made a savoury item ‘Aloo Gobhi‘ (spiced potato and cauliflower’s dry preparation) as well to go with this set and it was a hearty and delightful meal. The taste of which still lingers in my mouth and I am awaiting the next opportunity to make it 🙂
I suggest you get the very sweet and pulpy mangoes for this recipe rather than the fibrous ones. Some great mango varieties for aamras are Alphonso or Bangapalli/Safeda.
Here’s are the quick steps for you all;

Blending Time 2-3 pulses (0.5-1 min.)

Ingredients
- Mango Diced 4
- Cardamon 1 (pounded)
- Saffron 3-4 strands (optional)
- Sugar as per taste – only if mangoes are not sweet enough (optional)
Method
Step 1
Place all the ingredients in a blender and blend for 0.5-1.0 min.
Step 2
Chill the aamras (purée) in a large container or in separate bowls.
I highly recommend to make Pooris (deep-fried and puffed wheat breads) to go with it. Aamras-Poori is a divine combination. It’s a super hit with the kids and adults alike 🙂
