Papdi (Fried Flour Crispies)

Paapdi - Indian Curry ShackA tea time classic and a very popular Indian Snack. Papdis (Fried Flour Crispies) are very versatile. These can be had as is or can be turned into Papdi Chaat, Sev Puri, Dahi Bhalla Chaat or more. It is so delectable and easy to make. Needs just 3 ingredients and oil for deep frying.

Here’s the step by step recipe for you all;

Preparation Time 10-15 minutes
Cooking Time 7-10 minutes

Main Ingredient Maida (Refined Flour)

Ingredients                                                                  

  • Refined Flour (Maida)  2.5 cups
  • Carom Seeds (Ajwain)  1 teaspoon
  • Cooking Oil  Sufficient for deep frying and 1 tablespoon for the dough
  • Salt  to taste
  • Water  for the dough

Method

Step 1

To make the dough – Take maida (refined flour). Add ajwain (carom seeds), 1 teaspoon of salt, 1 tablespoon of Cooking Oil. Mix thoroughly. Add water little by little as required. Remember to make a slightly hard dough. Cover the dough with a damp cloth.

Step 2
Get the dough. Make a very small ball of the dough (approx. a small lime size). Flatten this ball, slightly dip it in oil and smear the oil on a flat surface (can be chakla or the platform of your kitchen). Then with a rolling pin, roll this piece of dough into a round shape. Make incisions (cuts) on the papdi with a knife (very essential, otherwise the papdis will puff, which we don’t want). Repeat for rest of the dough.Papdi - Collage with WatermarkStep 3
Heat sufficient oil in a kadhai (pan) and deep-fry the papdis, on medium heat, till golden brown and crisp. Take the crispies out on a tissue paper so that the excess oil is drained.

Step 4
