I am so glad to have challenged myself to ‘7 Days of Christmas’ which is seven days of making special recipes and uploading them on my blog this season starting today till Christmas. Celebration is in the air and it couldn’t have been a better time.
Let me now take you to the Special Recipe for Day 1 – Chocolate Cupcake. I am sure after trying this for the first time you will find reasons to make these delicious and easy cupcakes every now and then. 🙂
Preparation Time 15 – 20 minutes
Baking Time 10-15 minutes
Makes 8 Chocolate Cup Cakes
Main Ingredients Cocoa Powder & All Purpose Flour (Maida)
Level Of Cooking Medium
- Cocoa powder 1/4 cup
- Boiling hot water 1/2 cup
- All purpose flour (Maida) 3/4 cup
- Baking powder 1 teaspoon
- Salt less than 1/4 teaspoon
- Unsalted butter (room temperature) 1/4 cup
- Granulated white sugar 1/2 cup
- Egg 1
- Vanilla essence 1 teaspoon
Preheat oven to 190 degrees C/375 degrees F. Line muffin cups on the baking tray with baking paper. (This recipe can make upto 8 cupcakes)
In a small bowl, stir the boiling hot water and the cocoa powder until smooth. Let it cool to room temperature.
In a large bowl, whisk together the flour, baking powder, and salt.
Then in the bowl of your electric mixer, or with a hand mixer, or with a spatula beat the butter and sugar until light and fluffy. Add the egg and beat until smooth. (Scrape down the sides of the bowl as required) Beat in the vanilla essence. Add the flour mixture and beat until well incorporated. Then add the cocoa mixture and stir until smooth.
Fill each muffin cup about 3/4 full with batter.
Bake for about 18 – 20 minutes or until the cupcakes have risen, and a toothpick inserted into a cupcake comes out clean. (Do not over bake or the cupcakes will be dry.) Remove from oven and place on a wire rack to cool.
These are great to make ahead of time for a party and frost right before serving. You can also add colourful sprinkles like I did in the top pic.
