Shack Saturdays defines comfort this weekend through a big bowl of Aglio Olio (Spaghetti with oil, garlic and red chilli flakes) topped with your choice of shredded cheese.
It’s a recipe my better half is the best at. I love it with a fried egg on the side!
Preparation Time 8-10 minutes

Ingredients
- Spaghetti (Pasta made in solid strings) 500 grams
- Garlic 5-7 cloves minced
- Olive Oil (preferably extra virgin) 3 tablespoons
- Red Chilli Flakes 1 teaspoon (add more to your taste)
- Parmesan Cheese or your choice of cheese Grated (optional)
- Salt to taste
Method
Step 1
Bring a large pan/pot of cold water to a boil over high heat for 5-7 minutes. Then add salt generously. Add the spaghetti (pasta) and cook, stirring occasionally until it’s tender but not mushy.
Step 2
While the spaghetti (pasta) cooks, combine the garlic, olive oil (2 tablespoons), salt to taste, and red chilli flakes in a large pan over low heat, stirring occasionally, until the garlic softens and turns golden brown for about 2-3 minutes.
Step 3
Drain the pasta in a colander set in the sink. Add the pasta to the garlic mixture. Mix well. Adjust seasoning, to taste. Add 1 tablespoon of olive oil (preferably extra virgin) to the pasta and give a stir. Transfer to a large serving bowl or divide amongst 4 dishes. Serve topped with grated Parmesan cheese (optional).

(PS: You can pair Spaghetti (pasta) with many different pasta sauces and enjoy too. I have used 2-3 diced button mushrooms in this one – it’s completely optional.)
